The story behind it

I found this recipe years ago and use it when i need something fast and easy with (mostly) pantry ingredients.

Ingredients

  • 4 oz. lo mein noodles or flat asian noodles
  • 2 Tbsp butter
  • Protein (optional): 2 large eggs, cooked chicken, eggs AND chicken, whatever
  • 2 Tbsp brown sugar
  • 2 Tbsp soy sauce
  • 2 Tbsp sriracha (optional)
  • 1/4 tsp crushed red pepper (optional)
  • 1 handful fresh cilantro
  • 1 green onion, sliced

Directions

  1. In a small bowl, whisk together the brown sugar, soy sauce, sriracha, and crushed red pepper (you can use as much or as little sriracha and crushed red pepper as you want). Set the sauce aside.
  2. Cook noodles according to package directions.
  3. When the noodles are about half done melt the butter in a separate pan for the protein. If you're using eggs, crack them into a bowl and whisk, then add to headed butter and scramble lightly. If you're using cooked chicken, add it to the melted butter and warm through.
  4. Once the noodles are drained, add them to the skillet with the protein and then drizzle the sauce over top. Toss the noodles to coat everything in the sauce and cook for a moment to make everything meld together.
  5. Top the noodles with fresh cilantro and sliced green onion, then serve.
